做(zuò )法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂(liè )一小块姜,热锅,用姜块在锅上擦一遍,放两勺油,待油六成热(rè )下鱼(yú ),煎至(zhì )微黄(huáng )。煮沸瓦煲里(lǐ )的清水,放入煎煮好(hǎo )的鲫鱼和其他材(cái )料,武火(huǒ )煮沸,转中(zhōng )小火(huǒ )煲一个半(bàn )小时,下盐调(diào )味即可品尝。 -
